A kitchen fire suppression hood is essential for preventing and extinguishing fires in commercial kitchens. According to the National Fire Protection Association, about 61% of restaurant fires originate from cooking equipment, so an efficient fire suppression system is essential.

Commercial kitchen fire suppression systems usually have two main components: one for the hood over the cooking area and one for the gas line. Since kitchen fires frequently involve grease and other flammable liquids that water can't extinguish, the hood's fire suppression system typically uses wet chemicals.

Types of Kitchen Fire Suppression Systems

Wet chemical systems utilize a water-based solution that is released from the kitchen fire suppression hood over the fire. They effectively extinguish grease and oil fires but can cause water damage if improperly installed and maintained.

Dry chemical systems utilize a dry chemical powder released over the fire. They effectively extinguish various fires, including grease, oil, and electrical. They are also less likely to cause water damage than wet chemical systems.

Carbon dioxide systems use carbon dioxide gas to smother fires. They effectively extinguish various fires, including grease, oil, and electrical. These systems can be used where water or dry chemicals are harmful.

Foam systems utilize a foam concentrate that is released onto the fire. This method is effective at extinguishing grease and oil fires. It can also create a barrier that prevents oxygen from reaching the flames.

Kitchen Fire Suppression Maintenance

Kitchen fire suppression systems require regular inspections and maintenance from a qualified technician. It is also recommended that owners conduct visual inspections monthly. A fire suppression system is effective only when it functions properly, making maintenance essential.

Typically, these systems should be inspected at least every six months or whenever modifications are made to the cooking line. Additionally, it’s crucial to keep the kitchen fire suppression hood clean to prevent grease and grime buildup from interfering with the sensors or nozzles.
